MUSSELS
COMBEKK STYLE

INGREDIENTS

  • 1 kg mussels per person
  • 1 leek, chopped
  • 1 fennel, chopped
  • 2 carrots chopped
  • 2 stalks of celery, chopped
  • 3-4 garlic cloves, chopped
  • 1 lime
  • 1 tomato 
  • A few sprigs of fresh thyme
  • Fresh parsley

PREPARATION

1. CLEAN

Soak the mussels in cold water for 20 minutes and then scrub them well under running water. Pull out the beards and discard broken mussels.

2. FLAVOURS

Melt butter and saute the vegetables and garlic until softened.

3. COOKING

Add the wine and mussels and cook for 4-6 minutes, until all mussels are open. Discard any that do not open.

4. SERVE

Sprinkle whith fresh parsley. Spoon into bowls and serve with dutch oven bread, a glass of white wine and a fresh salad.
